A dream has become a reality for Alan Edelman’s family.
The Edelmans opened Woody & Bubba’s Barbecue in recent weeks, which consists of a food trailer traveling to different locations in the area. They started making barbecue a few years ago and always wanted to make it a business.
“It all worked out that we found a trailer and took the plunge,” said Edelman. “People have been really supportive.”
Menu items include pulled pork sandwiches, pulled pork nachos and a new feature called the “Mac dog” which is a hot dog with macaroni and cheese on top. The “Bubba’s bowl” is another popular item which includes macaroni and cheese, pulled pork and cole slaw.
“We’ve got our own homemade barbecue sauce and the macaroni and cheese is made from scratch – my wife’s got that down,” added Edelman.
The business is truly a family affair with Edelman teaming up with his son, Eric. Edelman is known as “Woody” as he was a truck driver hauling pallets. He said the name stuck with him for the past 30 years or so. Eric is “Bubba” since he was called that back when he was little.
“I needed financial help and he had the financial help so that’s how Woody and Bubba’s barbecue started,” Edelman said.
Edelman’s wife, Wendy, is referred to as the main rock of the business. Other family members include Andy and Megan Yergler, Klint Edelman, Amanda Edelman and Ella Edelman.
Look for Woody & Bubba’s in Fairbury quite often along with other spots such as Bloomington and Chenoa. More information can be found on the business Facebook page.
